The Sunday Covenant: Bone-In Chicken Smoked Paprika & Coconut Reckoning

Chipyks, in his usual humorous way, shares his recipe and process for his amazing Bone-in Sunday Chicken Smoked Paprika and Coconut Reckoning.

People ask me why Sunday in Poort hits different. It’s because while the rest of the world is taking shortcuts, buying grey, pasteurised ginger-garlic paste out of a plastic tub from a corporate supermarket, we are running high-voltage standards over here.

Niggalations 22:9 – “Woe unto the man who buys garlic in a plastic tub, for he has traded his soul for fifteen seconds of convenience.”

Look at the evidence. Look at the architecture. Here is the complete step-by-step scripture of how 760g of bone-in chicken was elevated from basic protein into spiritual ascension. I had 760 grams exactly, but you can adjust other ingredients based on the weight of the chicken you have. You don’t have to treat it like an exact science; Allow your ancestors to guide you.

  1. THE OVERNIGHT BAPTISM

(The Marinated Meat in the Oval Dish)

My 760 grams of real, bone-in thighs and drumsticks. Breasts dry out when they get emotional, but thighs and drums have character.
Your Sunday chicken starts on a Saturday; Baptised overnight in coarse salt, black pepper, and smoked paprika. Covered and left in the cold fridge to sit in the dark and reflect on its life choices.

  1. GENERATIONAL KINETIC ENERGY

(My daughter Jazlyn and the Brass Mortar & Pestle)

No plastic food processors. No buttons. Jazlyn on the couch in her pink Skye pyjamas, blanket over her knees, putting kinetic friction into a solid brass mortar and pestle. Pure gestampde fresh ginger and garlic paste. You don’t just teach a child to cook; you hand her the brass of the ancestors and teach her that real flavour requires labour.

  1. THE MISE EN PLACE COMMAND CENTER

(The Full Spread on the Hisense Freezer)

Before the flame touches the pan, the Hisense freezer becomes an operational command centre. Onions diced fine, fresh green chillies ready, real butter, Excel sunflower oil, whole star anise, cinnamon bark, cardamom, bay leaves, fresh curry leaves, and a dark dome of Kashmiri chilli, turmeric, and coriander powder. Zero chaos. Just pure discipline.

  1. THE FOAMING COVENANT & THE CRUSH

(Whole Spices Sizzling & The Fresh Ginger-Garlic Drop)

3 spoons of oil, 2 big blocks of butter. When that butter foams up like a disgruntled taxi driver at a red light, you drop the whole spices. 30 seconds to wake them up. Onions go in until golden-translucent. Then in drops Jazlyn’s coarse, brass-crushed ginger-garlic paste. The raw sulphur dies, and pure aroma takes over.

  1. SEARING & THE SPICE BLOOM

(Chicken Browning & Powder Spices Blooming)

Chicken drops into the buttery fat. 6 minutes of medium heat so the paprika-rubbed skin browns up and catches that crust where flavour lives. Heat down to low. In goes the ground spice mix—Kashmiri chilli for that violent red hue. Toast it in the fat for 90 seconds without scorching.

  1. THE TOMATO SEPARATION & COCONUT SANCTUARY

(Tomato Paste, Coconut Milk Mug, Saffron, and the Simmer)

7 tablespoons of tomato paste/puree. Cook until the oil separates and floats like a secret you can no longer keep. Then pour in 1.5 cups of thick coconut milk and the saffron infusion. Watch the harsh tomato transform into a rich, velvety mahogany. Lid on. Low heat for 15 minutes while you check your lawn and monitor the inverter voltage.

  1. THE CATHARSIS

(The Final Pot with Fresh Coriander)

Uncover. Pour in 200ml of water to loosen the gravy to pure luxury. Squeeze fresh lemon juice to slice through the heavy butter fat. Rain down a mountain of freshly chopped Woolworths coriander across the top. Look at that dark amber paprika oil floating on top like liquid gold.

Niggalations 40:19 – “When the oil separates and floats like a dark halo around the meat, let no man ask for a knife, for the chicken shall fall off the bone at the mere mention of grace.”

This is not simply just a Sunday chicken recipe.
We don’t do suburban catering over here. We do standards.

Respect the process, honour the brass, or stay on your side of the fence.
It’s the Sunday Covenant.
